Cassava
« on: January 14, 2013, 15:48 »
My Tesco delivery came with a bag of ground cassava - which should have been polenta
They have refunded the cost so it isn't a problem - I've just never used it before  ::)

Can I use it in exactly the same way as polenta ie as a thick paste Italian style or as a cake ingredient, or does it taste very different

I've only ever bought the chunks of frozen cassava as my local tesco sell it and I was curious, but it is very potato like.

Not sure the flour would work in western style cakes, but it is also known as manioc, tapioca starch and fufu if you are looking for recipes.

This is a link to a YouTube channel I watch which uses it.  I found it when looking for what to do with the frozen cassava

  Well if chewy balls float yer boat why not ;)

It as just to give an idea of the consistency of the flour.  I think its going to act more like rice or potato flour than wheat flour  ;)

I have made a couple of her recipes - the tofu in tomato sauce and lemongrass chilli chicken are pretty darn good  8) Sure they are very nice chewy balls

I didn't realise that it was tapioca  ::)

I found a cookie recipe  :)
http://www.knowingfood.com/tapioca/southeast_asian_tapioca_cookies.html

After Googling it seems to set just like course polenta, so I'll make my usual cheesy polenta recipe using casava and see what happens
