Wood to use - Either oak or wood from fruit trees.
Hot smoking easy as previously said.

Cold smoking easy enough too. Box 'uphill' with racks (36gal or even just a 5 gal drum), tinder box 'downhill' (would probably make a small firepit rather than an old can to avoid me having to look up if any noxious fumes are likely to be given off), link tinderbox to underneath of drum with a 'tube' (eg old clay drainage pipes, broken tiles, or even stones (make sure the ones at the hot end won't explode!). Make pipe long enough to allow the smoke to get cool (about 1m). Cover pipe and 'joints' with damp turf. Cover drum with damp hessian sacks or similar. Easy enough to do. Can be made more permanent and more beautiful if you want to. If smoke gets too hot you can damp down the turf over the pipe as required.

Experiment with different pre-smoking cures/bining etc.
