I've just eaten one of my ripe Rocoto Red chillis, stuffed with feta, couscous & pine nuts.  They've been ripe for some weeks now but left on plant.

Yee gods they're hot, like stuffing Habenaros (which I normally use well chopped in chillis & Jerk seasoning), but a lot bigger so heat seems much stronger.

A nice surprise after the tastless Jalepenos this yr.

Hi Fathen.  I love the sound of your stuffed peppers and might try that with my hot cayenne.  They are as hot as Vesuvius, but like yours my jalapenos are disappointing.  Doing a Mexican theme meal tomorrow and am going to skin the jalapenos over a flame and stuff them with potato and cream cheese.  Then coat in flour and whisked egg whites and deep fry.  A bit fiddly, so lets hope it's worth it.
Cheese makes everything better.

Jalapenos en escabeche : split in half and deseeded.  Mash tinned tuna with a little mayo and stuff the chile shells.  Great finger food.
