You are a bit late, you should be OK especially if you can cover them with a closhe to help catch up. They need to put down a good root system before Winter slows them down.

I just ordered some onion sets, but on the order confiremation it said not shipping for 14 days.

Should I just cancel that part of the order then?

No because the ground is unusually warm for the time of yera so they will get their roots down quicker than normal
