Recipe for using peppers, tomatoes and chillies
« on: August 27, 2009, 14:33 »
Hi, as the autumn approaches thought this might be a useful recipe for anyone who has leftover peppers. It comes from Bulgaria and there everyone has their own adaptation but this is the basic recipe. Obviously you can lessen the chillies if you don't like too much of a kick.

Lyutenitsa recipe from Bulgaria
20 lbs red peppers
3 lbs tomatoes
2 1/2 cups oil
2 cups sugar
20-25 chilli peppers, assorted
1/3 cup salt

Roast the red peppers, peel and seed, and grind or chop coarsely. Cut the tomatoes in 4-5 pieces each, grind and toss with the peppers in oil, fry for about 10 minutes. Add the sugar and the salt, add some water and simmer until the mixture thickens. Half way through, add the ground/chopped chilli peppers.
Preserve in jars.

I use it to add to stews, casseroles or stir fies.

Hope this is of some use.

Sounds really lovely, just the kind of thing i would enjoy, but you need an awful lot of peppers.
My 3 Bulgarian pointy pepper plants have given me exactly 2 peppers this summer, and no more on the way :( so don't think i'll be making your recipe any time soon, sadly :(
