Dried Runner Beans

Dried Runner Beans

When our runner beans started getting a bit tough I decided to leave them on the plant to dry and use as kidney beans in the winter. Clearing the plants today I opened one of the dried pods and the beans inside were white. Will these be edible do you know? Or would they be better left to sow next year?

one of the varieties of runner beans I had this year were white, so it may just be variety.
I am doing mine to plant next year.

We do the same every year - save some for the following year and treat the rest as dried kidney beans, They're probably quite nutritious but compared with the gorgeous taste of young runner beans are rather bland. The white beans are just as flavourless as the more common purple ones

Some people grow the white runner beans to use instead of haricot beans, so yes they're edible ;)

Just remember to give them a good 10mins fast boil when cooking them to remove the toxin lectin, which can cause vomiting. This is before a slow simmer until they are soft of course

The white beans have this as well as red kidney beans  :ohmy:
