Favourite way to cook courgettes?

Ok, my favourite way is to cut them 4mm/8th" thick length ways dress with olive oil, sea salt, ground black pepper and paprica.

I then put them on an oiled (olive oil) baking tray and bake for 20 mins turning after 10.
Then i set the grill to high and finnish off under there for another 2 to 3 mins until they begin to colour up.

I had this last night with some left over cottage pie and it was lovely.
I also do them on the griddle pan in the same way too.

Slice then cooked quickly in the pan with some olive oil, LOTS of crushed garlic, salt, pepper and lemon juice. Maybe some bacon bits too but that has to be cooked crispy first. :)

Griddled or cooked with garlic and a dash of cream and black pepper.

But the best way is how I had them in Greece this year. Sliced very thinly on a mandolin (or processor) dusted in salted flour and fried in plenty of light olive oil till crisp. Luvverly. :D

don't forget to add salt and pepper to the flour, and sprinkle with a very little grated mizithra/parmesan just as you serve them  ;)

All of these stir fry recipes, and add a few sprigs of purple sprouters if you have them...

And wait for the delicious 'crunch'!

I had courgette omlette for lunch and Nigel Slater's courgette crumble for dinner. You can never have too many  :D 

One of my faves is courgette choc chip muffins  :)

The Bulgarians slice them longways about 5mm thick,coat them in flour and shallow fry them. They are served with a yoghurt, garlic and dill sauce. Very nice.

You can make something quite like tzaziki, use courgettes instead of cucumber....cos all you really taste is garlic anyway  ::)  :D

Sliced thinly length ways, gently fried for a few minutes to soften, put into a baking dish, layered with a tomato based pasta sauce & herbs, cover with foil, bake for about half an hour in a medium oven, then sprinkled with breadcrumbs & grated cheese and finished off under the grill. Would also cope with bacon or ham pieces with it.
