My Rhubarb is approx 2 years old. As directed I have not regularly pulled the sticks, but did pull a few a couple of weeks ago. I now have a large number of thin (or thinnish) sticks. As a new plant I have not pulled these sticks. What do I do with these this year, will they all die off and just leave them in situ or what and when? Thanks

They die off late autumn.

Just throw some manure over the crown then.

What about the sticks there at the moment, can these be picked (some) or should I leave them in situ?

I don't like pulling rhubarb too late in the season, as it can get quite acidic.

Given than this is still a youngish plant, I'd be inclined to leave it and let it make strength for next year.
