I press the juice from crab apples, then freeze for blending with early juice pressed from early apples the following year, but that is for making wine/cider, not jelly.

Now that sounds a far better use for them!

Getting back to the original question, yes, but no crab apples will be ripe (brown pips) around here for some time.

I leave them till they are so ripe they fall off the tree, scoop up into a rucksack, wash, put through a food processor, press the juice and freeze (to blend with early eating apple juice pressed the following year).

IMHO crab apples are the fruit equivalent of pansies - a waste of time

You may be surprised that the sugar content of RIPE crab apple juice is MUCH higher than eating apple juice, and can produce 7.5 ABV cider without any addition of sugar.

But if all that sugar ferments out, think of what the residual taste will be - VERY SHARP TO SAY THE LEAST so don't go above 10% of your apple juice (unless blended with insipid juice).

We freeze sliced, peeled apples for baking with later. It's the only way we can keep them here. Can't see why you couldn't freeze batches of small, washed whole apples. We don't even add sugar to ours, just peel, slice and freeze in proper freezer bags.
