A lot of my peppers are growing flat and wide, a bit like patty pan squashes. Are they likely to fill out at all? There are plenty of them, but not many look much like peppers. Any suggestions?

I've got Orange Bell and California Wonder (red) - they are both doing it.

Im not sure then, just leave them to it and see what happnes

Over the years i've had peppers start off every shape you can imagine but they usually figure out themselves what they should look like.
Dont forget they are hungray plants and need a feed atleast once/week. Something like tomato feed or comfrey tea
