I know, it's the wrong time of year... but I'm tyring to plan ahead 

This winter I gave my apple tree a very overdue hair cut, leaving only two main branches (which will be cur back this year).  Consequently there is a lot of new growth on the old branches.  How far back should I trim this new growth?

As far back as you want, cutting above fruiting buds.

These are the fat roundy ones, not pointed leaf buds
