My pak choi is bolting too.  The younger leaves were lovely in salads a couple of weeks ago, they tasted like pea pods.  Now they are older they are not so good, but will defo try wilting them to go with some new spuds and a pie!

However in my experience you can plant later in September/October and they stay in over winter for an early spring crop.
I do that with corriander too......

Yes, you're right. Once cooler weather shows up again, you can start planting pak choi again. But for summer, forget it.
