Can someone tell me if we can compost the rubbish out of our coop if we've used diatom powder in it?

Yes no problem. However if you have red mite dispose of all bedding away from your property, otherwise they will return to your birds.

I compost mine too, i've got Diatom spread liberally in my greenhouse on the allotment to keep pests away from my plants, best thing I've ever tried. Also spread it around the base of pak choi on the main plot to stop it being nibbled by flea beetles (lots of pesky holes in it otherwise.) So yes, it is safe to compost.
