hi lisa apparntly you are not supposed to wash eggs as it removes the protective wax coating and bacteria can then pass through the shell. I wouldn't worry about a bit of mud / poo it gives them the rustic look :) you can buy special egg wash for eggs if you really want them clean but I wouldn't bother

I sell mine as they arrive and with the duck eggs that is always with poo. I do not sell them if they are cracked and advise customers not to wash them to store but they can wash them as they go to use them if they wish. My customers don't mind and often look oddly at me at the thought they may wish to wash them!! ???

For commercial egg sales it's illegal to wash eggs and only clean eggs can be sold for public consumption.  I believe it is even illegal to wash eggs for farmgate sales so the answer to this question is you should not wash eggs for sale.

What you do in the privacy of your own home for your own consumption is up to you.  I prefer to scrape off any droppings or dirt, or just use a very slightly damp cloth.  Heavily soiled eggs I always store separately and use quickly for cooking only.  Fresh clean eggs which i accidentally crack I also treat similarly or cook and feed back to the chickens.
