[Novice]

I've decided I have WAY too many raspberry bushes on my plot, and I'm gonna take half of them out - replacing them with strawberries.
I will be giving them to new homes, but I wonder when is the best time of year to transplant ( they produce fruit in June/Jul/Aug ) and how should I transplant i.e. cut the old cane right down ?
...and what about strawberries ? Anyone recommend good varieties or any tips I should have when purchasing ?
