Jooles, well done for trying to rescue it, pleased it's not going to waste  :)

Cooking thermomiter is a good idea. I have one that hooks over the side of the pan, it has lots of setting temperatures marked on it as well as the numerical scale, a bit like this one (you will find cheaper)

 It was 4lb of fruit, too much water (didnt measure it but approx 5.5 litres as its a 7 litre pan) 4lb of sugar and 3 bottles of pectin!

i know my first attempt at marmalade came out as very tangy orange syrup with the shreds on the top but have to say was wonderful on icecream
