just cleaned out my hen house and found what looks like a lot of dead skin, i know one is moulting would it have  come off her ?

if you look at the moulting chicken you will see the new feather shafts have like a wax tube over it, this flakes off as the feathers grow. I assume this is what you have seen and therefor nothing to worry about
