This is a rather nice recipe and warming on these cold days

1 large onion.
1 Clove of Garlic or more if you prefer.
2 Tsp of Paprika.
1 tbs of Tomato purée.
400g tin of mixed beans/pulses.
1 Large carrot cubed or sliced as you prefer.
1 Red and yellow pepper sliced cubed as you prefer.
1 Stock veg cube.
1 Tin of chopped tomatoes.
850ml of water, or more or less depending on how thick you like your soup.

Heat sauce pan and add a little oil or water cook the onion, garlic and carrot until soft.
Add the peppers and Paprika and cook for a further 5mins.
Add the stock, tomato purée, pulses/beans and tomatoes
Bring to the boil and then simmer for 20 minutes or untill all the veg are tender.
Season to taste.

makes six good servings.
For weight watchers the pro points are 2pts per serving.

My kind of food that Kev. I shall deffo give that one a whirl. I love tomatoey beany paprika dishes. Goes well with good sausages too
