I have found a rose bush tucked away that is covered in small bright red rose hips. It is a white climbing rose.   I fancy making something with them as they look quite delicious, maybe apple and rose hip jam or something...  Please does anyone have a recipe or any idea what I can do with them?

Hi, My Oh and myself made Rosehip Syrup last week, was great fun, if a little labour intensive, and it is lovely, Very fresh, fruity and floral if that makes sense. :unsure:

We have a lovely big dog rose in our lane so so far this year we have made rosehip syrup, hedgerow jam and we have a large tray of them sitting under the woodburner drying to make tea from. Still loads left but we shall leave them for the wildlife.
The reward of a thing well done is to have done it....

Along the new path they have planted about a dozen big rose bushes on each side, and the one bush had just enormous plump berries on it, so I picked those.......plenty more for the birds.

Next year I will have to have a look what the flower colour is to see how this particular bush is different from the others

All of ours have white flowers, but there are different coloured berries.  :unsure:

I potted my rosehip jelly up last night, but it didn't set very well at all.........very surprising :(
So I added half a packet of pectin, and brought it back to the boil for 4 minutes...so fingers crossed.
I don't know why/what happens but it is also much clearer now and a darker pink :)
It's sweet when you first taste it and then you get that sharp kick at the back of your tongue. mmmmm  ;)

I didn't make jelly but the hawsin sauce I made is like that. Not much taste at first then a real tang as it settles on the tongue.

I had never even tried it let alone make any. So I gave it a try this weekend as I have an old English rambling rose that has produced masses of hips this year. As you said a bit labour intensive but well worth the time & effort.
It makes the most fantastic hot drink & will be ideal for the winter after being out in the cold.

Could I freeze the hips for later use?
MY BACKS ACHING!!!!!!! AGAIN!!!!

Apparently you can freeze them and it apparently makes them easy to get the pulp out without the seeds and the itchy bits.
