I'm looking for a simple recipe for rum punch for a Caribbean night we're having in a couple of weeks time. I've looked on the web and most of them are either from overseas and have ingredients I've never heard of or pretty complicated for my basic mind  :wacko: Any help would be really appreciated, Cheers.

If it works, organic. If it don't, well.........??

Try this one:   50cl pineapple juice, juice of 3 oranges, and three lemons, 250g sugar, half a bottle dark rum. 50cl American Dry ginger ale.  Disolve the sugar in the pineapple juice, add the other ingredients except GInger Ale and chill well or add an ice block. Add ginger ale just before serving so it keeps the bubbles. You can add cubes of pineapple, cherries or whatever you have to hand for a bit of colour, or not.

When I was in St Lucia, I pretty much lived on their wonderful rum punch  :D:

You can substitute the banana juice for anything else. I'd suggest you try making a small portion first to see how you like it.
