I persuaded my hubbie to have some chooks by the promise of home made mayo and fresh meringues.
One of my favourites is to lay slices of ginger cake (the co-op do a great one with free range eggs if you can't be bothered to make your own) in an oven proof dish, then a layer of strawberries or raspberries before adding a layer of meringue and bunging in the oven.
I warn you though, it is rather addictive!!!
We also sell our spares to our neighbours which helps cover the cost of the food and beings as we often get a dozen or so eggs a day it stops us from having to eat egg at every meal!
