How to avoid sharp pickling taste

Hi.

I pickled some beetroot last year - I tried some in malt vinegar and some in white. Both from tescos and labelled suitable for pickling.

The white vinegar ones tasted better but this was still a very sharp taste - more vinegar flavour than beetroot to be honest.

Any tips on softening the taste? Someone told me a while ago to dilute the vinegar 1:1. Does anyone do that and is it safe?

Any hints appreciated - I want to pickle more this year and will pickle shallots too.

Bung a bit of sugar in?
Self-sufficient in rasberries and bindweed. Slug pellets can be handy.

Bung a bit of sugar in?

Thats what i do, makes all the difference to my taste buds.  I put 2tablespoons in 1pint vinegar, sounds alot but you dont drink the vinegar.  I also put the beetroot slices in a sieve and rinse under the tap and dry on kitchen paper before adding them to a sarni :)

You can also add Raspberry or Strawberry jelly cubes to the vinegar.
