chutney - is this a disaster or normal?
« on: December 21, 2009, 18:01 »
Have just got out the jars of chutney i have made and pretty much all of them are darker in colour at the top of the jar

there is no mould, and i just opened one and tasted it and it tasted ok, but more importantly does this mean its gone bad? is it normal?

is it saveable, as in should i just gift it as is? is this normal?
remove the darker bit and a chunk of the normal colour and re jar in new sterilised jars (i thoroughly cleaned and sterilised them the first time round)

or do i need to bung it away????

please tell me it is salvageable  ???

just keep breathing................

I should think that something a bit darker in colour has risen to the top.  If there is no mould and it tastes fine, then don't worry.  It is just settling out.  After all - it has the advantage of being made by a real human, not a production line!

It's a new one on me but if it smells OK, tastes OK and there is no mould I'd just re-name it Bi-coloured..whatever... chutney!

am doing that anyway madcat...........got it all sorted  ;)..............actually going to bake one in the oven with some of the chilli jam i made too...............cant have enough chilli chutney spice things with ham.................

but am having a little wonder about the discoloured chutney  - thinking i might remove the darker brown top bit, reheat the good colooured bit and re do the jars (sterilise first of course) - dont want anyone to get poorly as most of the rellys who are the recievers are getting on a bit.........tender tummies and all that ???

wont take long and i will be able to sleep ok at night

i took a large spoonful off the top of each, re boiled it for a short while and re-jarred it......but good to know its not my chutney making chrissieb and richyrich.......had a little taste of it too now its matured - redistributing this chilli only to rellys who will eat it.........so means i can save some for us too
