I bought a load of fruit trees about 7 months ago and planted them in large pots and labelled them with the variety.  Every last label has vannished and I dont know which is which, is there a way to tell.  Some are blossoming now, others just have leaves.  Will I need to manally polinate them to ensure fruit?

The varieties are;

plum victoria
cherry stella

pear beurre hardy
pear conference
(I think I also have a pear williams)

apple bramley
apple coxs orrange pippin
apple golden delicious
apple granny smith
Avoid fruit and nuts.  You are what you eat.

Study the leaves to tell what the tree is. Use a reference online to determine what you've got, Google it perhaps, or take a leaf of each to a knowlegeable friend or garden centre for identification. As for the varieties, it'll be hard to tell until they fruit and you can again study the shape and colour differences. And find some better tags to start labelling.

I'm not familiar with Victoria plum, but usually plums will self pollinate. You have enough pears to pollinate each other, same with apples. When planting out, try to keep types (eg pears) together in case one variety needs a different pollinator.  But don't let any of the pears, apples or plum fruit for a few years. It'll rob overall tree growth for meagre output and you risk young fruiting branches breaking off in a wind or bad storm. It'll be hard to resist, but the end result will be so worth it.

I would wait to see what fruit you get off which ones to be able to tell which are which.

Your plum and cherry are self fertile.  Other trees in the area will help increase yields but not necessary.

Beurre Hardy group B (self sterile) will need pollinator William De Chretien will do.

Conference Self Fertile group B (partially self fertile) yields increase with pollinator  William De Chretien will do.

William De Chretien group B (partially self fertile) yields increase with pollinator Beurre hardy or Conference will do.

Bramley Apple Group B (will not act as a pollinator) need two pollinators Cox's and Granny Smith will do this.

Cox's Orange Pippin Group C (self sterile) need pollinator - golden delicious and granny smith will do this.

Golden Delicious Group D (Self sterile) need pollinator Cox's orange pippin will do this.

Granny Smith Group C (Self fertile) doesn't need a pollinator but crops will increase if one present Golden delicious is ideal.

So in answer to your question no you won't need to hand pollinate...mother nature should take care of that for you.
