Hello all

Does anyone know when horseraddish is ready for harvesting, and how do you harvest it?  I know its only the root you eat as the leaves are poisonous (or so I have been told).

Also if anyone has a "great grannies" horseraddish recipe they would like to share that would be fab, I prefer the old recipies than the new ones as they prove the test of time.

Ours is about 6 months old growing in a tub because of its invasive nature.

Can i say ditto! Have the same issue. Friend told me that to make horseradish you have to grate it on the smallest holes of grater and it stinks and make your eyes water! So I am not looking forward to making it... but i've grown it now so i feel i should use it.

Hi ourveggiepatch & darcyhen.
    Here are the ones I shall be using as per. "The Constance Spry Cookery Book"

   To preserve Horse-Radish.
        Was, peel the roots and grate at once. Fill small or medium-sized, screw-topped jars two-thirds full. Add 1/2 teaspoon salt and 1/2 teaspoon sugar to each jar. Cover with distilled malt vinegar, put a piece of white paper under the lid and screw down tightly. If liked a piece of fresh chilli may be put into each jar.
  This may be used for sprinkling on beetroot salad or as the basis of a sauce.


  Horse-Radish Sauce  Cold.

 1-1 1/2 heaped tablespoons freas grated horse-radish.
 1 dessertspoon vinegar.
 a squeeze of lemon juice.
 1/2 teaspoon mustard.
 salt & pepper.
 sugar to taste.
 1/4 pint cream.

  Mix vinegar, lemon juice, mustard,seasonings, sugar,and horse-radish together.
  Whip cream till stiff, incorporate other ingredients, adjust seasonings. Ad extra horse-
  radish if necessary.


 Enjoy.
Ears and Eyes open, Gob shut.

Can I recommend that you wear diving goggles when grating the horseradish. Sounds daft but it really does work. I often wear goggles when chopping lots of onions. I can only imaginel how much worse horseradish is.

Hi all

Sorry I havent replied sooner, I havent been on the site for a little whilst as I have been megga busy.

I have copied the recipe - thanks for that and will certainly use it and the tips for wearing driving goggles is a fantastic idea I am glad the issue with regards to protecting eyes was mentioned as I didnt think of that!

Does anyone know how old the horseraddish needs to be or how big until harvesting?

my hubby dug some up from on a grass verge, the leaves were prob at least 1' long.  We finely grated it and added thick double cream and used it that day.  Delicious till we found out the place it was growing was next to the septic tank opening for the pub across the road  :tongue2:  :tongue2:  :tongue2:

Defo wear goggles - when the OH was grating horseradish last year the cat & I really suffered, streaming eyes, sore throat, coughing etc - I think he should have done it in the garden! The sauce was delish though LOL!
