Mange tout - using a surplus

Our mange tout are doing better than expected. Can I ask, please, if anyone knows of a way of using  or storing the surplus ??  Our main crop peas are also doing very well and most will be headed for the freezer.

Blanch briefly (1-2mins) and freeze for long term storage. Its best if you bag them up in portions as being flat they tend to stick together when frozen.
To use up fresh they work great in stir fries, added near the end of cooking curries or even raw to jazz up salads.
If desperate there are recipes for peapod wine about but I can't vouch for that, having never tried it.

Ditto jb - freeze then down - we've loads again this year I seemed to have managed mange tout growing we grown the golden ones - which really are just yellow. We tend to pick for salads and the older ones get steamed and sprinkled with parmesan cheese.
