I have a dozen or so red onions and they seemed to be coming along nicely however some are bolting can I do anything

Cut off the flower and use them first as they won't store well.

When you say use them first do you mean eat them now or can we leave them  til there ready?  i have a couple that have also bolted but there not by any means full size yet.

You can wait until they are full size, but don't store them.
