Can I smoke food with my kettle BBQ?

Reading the thread below on hot and cold smoking had me off on a google search about the thing.

I'm wondering if I can do sort of smoking type thing with my BBQ if I put in a container of water/beer/whatever.

Does anyone know?

You need a thermometer to do proper smoking of meats especially. I think you could put a probe thermometer in the BBQ. I have smoked-dried jalapenos (to make chipotles) in my kettle BBQ and it worked out pretty good. You have to make a very tiny fire on one side (using briquettes, not lumpwood charcoal) and chuck water-soaked fruit-tree wood chips on. I only did it because I had loads of apple tree trimmings so it was cheaper than those expensive jack daniels barrel chips. I had to use a confectionary-type rack to hold them as they got very tiny as they dried.

Warning, it took *MANY* hours to get them fully dried. Start very early in the morning and be prepared to be up checking tempertures for a long time, possibly through the night.

I do LOVE chilpotles.  Only ever had them canned (San Marcos brand is excellent).  Home-made must be spectacular.
