Why earth up Tatties?

Why earth up Tatties?

Hope it's not a stupid question...  but as the subject line asks..  Why should Tatties be earthed up?  

Answers on a post card please....   :wink:

1. improves the size and quality of the crop
2. prevents tubers from going green (which makes them poisonous)

I thought one of the main reasons was to stop the halms from getting killed by frost.

I'd go with the non green tatty bit. We forgot to hill up some Charlotte spuds on Mrs. Digger's plot last year. Nice crop - but all green!!!
Did it really tell you to do THAT on the packet?
