Freezing potatoes

Hello all.

Are there any ways to store potatoes by frezing them?

I've mashed them, they're ok when thawed though a little wetter than before freezing.

Not sure about roast, I probably wouldn't freeze them raw.
I try to take one day at a time, but sometimes several days all attack me at once...

We found a type of second earlies that made brilliant chips, chopped them up and blanched them and froze.  Lasted us until Feb this year. Have asked Paul and he can't remember what they were either, not much help am I.

For roast, par boil them chuff them up a bit, paint with oil and freeze, seperated on a tray. I've done this and kept them for a couple of months, don't know about long term storage tho!
Mind you 'Aunt Bessies' do frozen roasties so they should be ok for longer :)

Cook, mash and make into potato cakes and open freeze.  Pack into bags separated with eazileave and cook from frozen in the oven or on the griddle or in the frying pan.  You can flavour them with parsley (good use for left over mashed pots and parsley sauce) or chives or onion or cabbage (bubble and squeak cakes) or ... use your imagination.

They are great for those evenings when you really can't be fussed ...  :(  pop em in the oven with some sausages, onion wedges and a casserole of baked beans.  Feet up and come back 20 mins later to turn over.  easy.  Or on the griddle with a bacon chop and some mushrooms ... Or ... saved me on a friday more than a few times!   :D :D

I've generally been disappointed with frozen mash but potato wedges work really well.
 
Chop potatoes into wedges of roughly equal size - exact size doesn't matter so long as they're not too thin - put in a bowl with a splash of oil and seasonings to taste (ground cumin and paprika is fantastic), then tip out onto a baking sheet.  Bake at about 200C until just browning (i.e. a bit less cooked than if you were going to eat them right then), take out of the oven, allow to cool, and freeze.  They're easier to handle if you freeze them on a (clean) baking sheet then bag them up after a day or so.  When you want to eat them, just tip them onto baking tray and cook until they're hot right through and going crunchy at the edges.  Brilliant with home-made baked beans.
