why forced rhubarb ?

I picked up 5 new cooked books in a sale yesterday but noticed that a couple of reciepes list forced rhubarb in the ingredients. I have only ever noticed it say rhubarb before rather than saying forced.

why does it say forced and could I use un-forced when mine grows :?

Forced rhubarb is more tender and sweeter. Just adapt the recipe when yours grows - probably longer "stewing" time and a bit more sugar.
