Nippy weather, what to harvest

Last night it was a tad frosty, I was just wondering what needed to be harvested before the real frosts are upon us!

courgettes, pumpkins and squashes, beans although I think French beans are a bit hardier   Celeriac is supposed to be gathered in before frost turn them to mush but I've got away with it til now  :D

This is what I have in the garden that I am not sure about

butternut squash
french beans
carrots
beetroot
spring onions
spinach

That is it apart from my brassicas and leeks

squash will go mushy if we get a frost. Mine I noticed today had got very blackened and flopped foliage,  Carrots, brassicas and spinach should be ok. Beetroots - hmm not sure but if they're ready I'd get them in and make chutney or pickle them. You can make cakes and soup with them too. Spring onions will probably be fine as will your leeks

Took up the beans today - picked the last few first. Also brought in the butternut squash - the plants were definitely dying - but some of them are still quite green - they are now in our bright conservatory - are they likely to ripen up? Or can we still use them slightly green? Also pulled up the sweetcorn - and found three cobs worth keeping - hurray!

Brassicas are doing well. Swede not so well, but will see how they do.

Oh!!  :oops:  I didn't know that about Celeriac. I was given 1/2 a doz or so, and well, I don't really know what to do with them now? can you store them like squashes/pumpkins?

Nice one Lucy! :)  That's sorted it. I'll be shifting some of the old straw from around my strawbs. That should do the trick. :wink:

Or even without. Hardy as old boots. :D  Mind the slugs though. :wink:

Sheridal, the butternut and the beans are the priority. The beetroot if it is mature, won't stand long.

Yesterday I went and brought in, the butternut squash, beans and remaining sweetcorn. Found a couple of large cobs hiding that I didn't know that I had. Beetroot could do with a bit longer as could the carrots, so will just keep an eye on them.

easiest way is use the search tag (top left on your screen) type in Beetroot, and look in the Cooking storing and preserving section. I had a quick look and there's over 61 entries. You can also check out Val's recipes (link on the home page) there are a further 9 recipes on that.
What do you want to cook? :wink: We made some lovely chutney with the rest of ours :)
