I have a newish lottie (last Nov) with some fruit trees including said plum. Over the winter I removed all the mummified fruit but this year the fruit seems to start ripening and the gets some mouldy lurgy and rots, any tips I can use over the winter to prevent it next year.

Might be brown rot. Lose all bad fruit as early as you can, Prune out all brownish looking branches in the spring and hope for no rain during flowering...
