summer squash - how to cook?
« on: August 11, 2008, 19:49 »
i've grown crookneck summer squash for the first time this year and now a few are ready i'm wondering how to cook with them.  they seem half way between a courgette and a butternut so i don't want to overcook them.  i'm thinking about roasting them for 20 mins gas mark 7, does that work for anyone else?

any recipe suggestions on how to use them?

One of my lottie neighbours gave me some last year, in fact she's given me a very productive plant this year!

She told me to grate it & cook it along with tinned tomatoes, onions, herbs & garlic.

Made a great compote which even the kids raved about. Can be used as a pasta sauce.
Did it really tell you to do THAT on the packet?

well in the end i peeled, chopped into cubes and roasted with a few halved toms, olive oil and seasoning, and then added them to a thai curry, and i wasn't disappointed! exceptional stuff, good to see that even with a lousy summer some of the veg are working out a treat!

they are good cut into cubes, sauteed in butter or oil and added with other veggies with rice, like a pilaff
