Fresh herb, lemon and breadcrumbed pork

Only thing I have to harvest at the moment are herbs....so made this for dinner:-


Blitz together about 3 slices bread....any would do  ( I used a white roll and some granary bread) the zest of a lemon, salt, pepper and a good teaspoon of chilli flakes or a nice zingy fresh chilli and a REALLY good handfull of fresh herbs....I used, thyme, sage, mint, chives and coriander.
Pound loin chops, ordinary chops or rib chops  (without the bone) 'til about half and inch thick. Whisk up a couple of eggs. Dip the meat into the eggs and then coat with the breadcrumb mix. Chill in 'fridge for half an hour. Melt some butter and olive oil together in a large frying pan and  add the meat when sizzling. Fry for about 6 mins each side...or until breadcrumbs are crisp and brown. We had this with plain new potatoes and a mixed salad with a mayo, lemon and dill dressing :)

I do something similar here, infact I have chicken breasts for tomorrow and thought about trying your recipe Agapanthus, sounds good.

Aggy that sounds yummy. I made a sausagemeat mushroom onion etc etc and couscous stuffing to go with the pork today and hopefully it went down well. I think if you do a good flavour and really good gravy or sauce you end up with soimething worth eating. 8)
I know less today than I did yesterday, and I knew nothing then!
