Hello everyone, 
each year I 'biltz' pick and freeze all the sweetcorn cobs at the same time, even the tiny ones we use those for stir fry.  This year I'm going to harvest the cobs ready and leave the smaller ones to develope.

You would also need a second crop of tassels to provide the pollen for corn to develop. I recalled that those tiny stir fry ears are not yet pollinated, verified here https://www.evergreenseeds.com/baby-corn/ 

If you have the growing space, you can add additional crops of short-season corn, spaced 2 weeks or so apart. That could keep you up to your ears in ... well, ears, throughout much of the summer.

Added later: Another strategy if you can do it space-wise is to plant several varieties with a spread of maturity dates, each in its own block. That way, as one variety stops producing, another starts; it is possible that the pollen from the later varieties could pollinate the small ears on the early varieties, but I wouldn't rely on this.
