Is it possible to store parsnips in sand and soil like you can for carrots only the rats have decided to start eating them and I need to dig them all up before they get them all.

yes you can liz .damp peat is fine ,failing that blanch freeze them as chips and deep fry   ,not as good as fresh but a good way to save them in a rush.

Thanks for that I would have liked to have left them in but them darn rats are not gonna feast on them. It will be interesting to see how long they last this way. Liz

I like parsnip & carrot mash - cut into chunks and boil in minimum of water or steam. Mash with salt, pepper and loads of butter.  Make in a batch then freeze.  
Saves a lot of time, batch cook and freeze.

now parsnips steamed mashed and baked with a layer of cheese ,and some slices of tomato on top,,, phawwwwwwwwwwwww
