Usually bitterness is linked to slow growth.  Lettuces can go the same way quite easily.  I grew celery successfully this year in troughs which I could keep well watered and fed.  They just got a general purpose liquid feed for veg every week.

I have tried and failed to grow it in open soil, but my old plot neighbour used to every year.  He dug in loads of compost as soil preparation, planted all his celery in a block, then watered it every day.
