i put in some young apple trees around a month ago two of the leading branches have snapped at the tips.  I think maybe birds have tried perching on them.  What should i do?  leave them or try making another side shoot a leader.

Leave them, just tidy to a grow point.
A side shoot will naturally take over as leader in time.
