What sort are they? And what is most likely to happen if I plant them out?
Will they bunch up, fill out, go to seed or just curl up their toes and die?

I’d expect them to grow if they have enough roots to support the top growth but I’m not sure why you would want to as when you buy them they are the right size for spring onions! Unless you want them to go to seed to save?

I'm hoping for a quicker start to growing bunching onions than starting from seed, so I'd like for them to be bunching onions . . .

Looking up "bunching onions" on the internet and it just shows Spring Onions, so I'm not sure what you're trying to grow.
