Pancake day
«

Just made a big jug of batter for pancakes. Usually i make a mixing bowl bowl full but after having 3 kids this time last year I am down to just 1. Alice who married last year thought it was the week after Valentine's Day and one of my lads is a mature ( haha) student at liverpool uni and forgot totally. Nice to know they still need their mum. It is late this year so is Easter as a result of that. Happy tossing lol

They know where to come if they really need something, though
As there's only me I didn't make any but treated myself to a Bliss Salted Caramel Cheesecake yogurt, it was lovely. Probably won't add them to the regular shopping list though, much too tempting

Hah the vegan cafe I support put on the usual pancake day so I went out as there's only me at home. Vegan pancake, chocolate sauce, strawberries, ice cream, whipped cream. Fattening. I enjoyed it.

I always do big batches as they freeze so well !
Got it down to a fine art now , two pans on the hob the pancake is started on the hot one then flipped not tossed onto the next to do the other side !
Can whip through nearly half a gallon of batter pretty quickly like this !

Made the batter yesterday but the stir fry i'd prepared filled us up and we didn't want them. Tonight we had pork mince, fennel and chilli cannalloni(sp),made with the pancakes instead of pasta. Loved it, got the idea from the Sun TV mag from this week.

Here's a fairly
standard recipe for vegan pancakes
Vegan ice cream is made using non dairy products such as coconut milk, almond milk or other non dairy equivalent as well as non dairy butters and creams.

My niece came round today and told me she's made some pancakes from an American recipe as they're more fluffier, and had them with smoked streaky bacon, maple syrup and bananas. She said they were absolutely delicious1
