Yesterday i peeled back some of the leaves on the sweetcorn cob,the fringes are brown,but i found the kernels are white,is it just a matter of giving them more time?

Some varieties are more yellow than others. The true test if ripeness is to pierce a kernel with your nail and squeeze it. If it is clear liquid it is not ripe. If it is milky it is ripe.

I agree with salmo. There seem to be places that suggest sweetcorn is ripe when the fringes are brown but I've found its a few days later.

The "fringes" are called "silks" and I find that they have to be a really dark brown for the cob to be ripe.

Dark brown has always worked so far for me, but do the squeeze test to be sure as it sounds like good advice

I picked mine when the silks were dark brown and found the although they looked unripe at the tip, they were nice and yellow lower down. They were lovely.
