My parsnips are also very tall this year, and I am hoping this means there is lots going on under the ground. As they need their leaves to grow with, I shall not be cutting them down, as usually we start to harvest them around the end of  November. I think you should leave them to grow chrissie and not take out any more leaves.

My beetroot is no where near as tall, but I have taken off damaged and yeloowing leaves as they are not doing their job any more, and yes, new leaves will still be growing.

Sounds as though yours are both doing OK!

You've still got time to resow beetroot, and if you have room & seed try the parsnips again, if they have bolted I think you'll find the roots will be woody & inedible

The parsnips have only 'bolted' if they have made a flower stalk, like the beetroot.
If all you had was tall leaves, due to the weather - then they haven't bolted, and the roots should be fine  :)
