Why is it upside down? And where do you get the papers from?

They are
supposed
to be so light and airy that they sink down if you don't cool them upside down - I doubt mine ever will be, but I'm trying lol.
I got 10 papers from Bakery Bits a few years ago, I'll need more for next year.
http://bakerybits.co.uk/panettone-cases-750g-or-154mm.html
they also sell Fiori di Sicilia Oil or Aroma Panettone Oil for flavouring, plus lots of other baking goodies........

A recipe to use it up, rather than to make it, then.........
I eat it all up - it's soooo lovely toasted

A late update, the panettone tasted ok, but not a good texture
For the day itself I made these
http://www.bbc.co.uk/food/recipes/mini_cranberry_94888
Flavour wise I used the Bakery Bits' Fiori di Sicilia instead of the spiced rum, and they were absolutely gorgeous.
So I'm giving up trying to make a big one - I'll make the buns every year, instead

They look fab
I like the way the recipe starts 'Like panettone but couldn't a whole one' - yes, but no trouble eating a whole one
and I could eat a whole tray of those buns as well
