Scotch bonnet/garlic sauce

Right so I have a lot of scotch bonnet peppers in the garden and having tasted a thin slice of one though " oh my good god" what can I do with them ? I found a recipe on you tube for  a chunky scotch bonnet and garlic sauce so thought I would make some. I had no bird eye chillis so used a dozen mixed red and green jalapenos instead. recipe is below.

18-25 bird pepper (birds eye)
5 scotch bonnet pepper
6 cloves garlic
2 tablespoon chopped parsley
1 scallion
1 cup vinegar
3/4 teaspoon salt
1/4 teaspoon white sugar
2 leaves shado beni (3 tablespoon chopped clantro)
1 lemon (or lime)
1 shallot
I have to admit I removed the placenta and seeds from all the peppers in an attempt to reduce the heat and make it more edible. Well after pulsing it in the food processor to the desired consistency various parts of my anatomy at tingling and I have been coughing as the vapours were catching my throat... lord only knows what would have happened if there had been heat involved in the recipe! I tasted a little on a spoon and it is very hot god only knows what it would have been like had I not removed the placenta's!!! It actually tastes not bad but very hot, I think it could be nice on a burger. taco, BBQ'd pork chop or a cheese sandwich. I have jarred it up and put it into the fridge to marinade for a week and will taste it again it looks very appealing so if you make any don't leave it where children could find it :) !!

Just tasted this sauce again after it has matured and it is great if a little spicy. Because I removed the placenta's the sauce is really quite tasty and spicy but not too hot. It is great on a cheddar cheese sandwich and also on a burger totally recommended but be careful to remove the seeds and placenta's otherwise it would be very hot!

To be honest I don't know but it has a lot of vinegar in it so I would hope for quite some time. I have mine in the fridge so it should last for months? It does taste good though and is quite moreish like all chilli sauces.
