caulis gone purple

hi, how come my caulis turned a mucky shade of purple ?

Caulis are a cool weather plant. The purple tint is caused by excessive heat and sunlight. They're quite safe to eat. It's caused by anthocyanin, which is what you find in fruit such as grapes & plums.
Did it really tell you to do THAT on the packet?
