Soggy Green Tomato Cake!

Thought I'd use up some unripe  toms making Green Tomato Cake - sounded intriguing.

It tastes delicious - like an apple and sultana cake - but unfortunately it's been a bit of a baking disaster.

It came out of the tin in pieces with the consistency of a bread pudding, despite having given it loads of extra time in the oven.

I made mega quantities with a plan to freeze it, so it seems such a waste too chuck it all away. A bit will make a lovely pudding with custard tonight, but any suggestions how I could use up the rest?

 ... And don't say Polyfilla.

ohhh that sounds interesting - was the recipe from gurgle?

I've not found anything to do with cake failures other than covering the in custard. I suppose you could use it as a trifle base, but even that's much of a muchness.

Can you put it upside down under the grill to dry the bottoms up a bit?

Thanks, both. Yes, the recipe was from all recipes.co.uk, if you want to look it up. Just had a bit more as it's cooled now and, as I say, it tastes great. As there's tons of it, do you think I could freeze it, then defrost it to use as a trifle base? Great idea to put it under the grill, MoS, but unfortunately the cake lumps are too small to do that.😗

Took me hours to dice all those flamin' toms, as well! 😄

I try to take one day at a time, but sometimes several days all attack me at once...
