hi all , ive never used spelt flour and ive come across a nice almond cake using this flour , could I change the flour to ordinary , there is no mention in the recipe .

I think Spelt flour has less gluten making it more suitable for easy digestion. I would give it a go personally

As BQ says, you can substitute regular flour for spelt. The reason it was in the recipe is that spelt has what is described as having a slightly nutty flavour, which would enhance the almonds flavour. Spelt's gluten content also breaks down faster than wheat flour so it makes a nicer pastry.

You could substitute wholemeal flour for the spelt. ;)
