we have these growing over our fence which is fab, but i dont want them to get too large next year and want them to fruit again, when should i cut them and how much by ?

Nowish or any time in the winter, you want to cut out all the branches that fruited this year to about an inch of ground level.

You only want to keep the newly produced, this year's canes.

and if there are too many new canes for the space you have, then them out just keeping the thickest, strongest ones.  they will throw out side branches from buds by the leaf nodes, and these will be where the flowers form next year.
