 Can anyone tell me when we use our fresh eggs for poaching or hard boiled the yolks stay right at the edge in hardboiled or indeed separate completely from the yolk in poaching - is there a feeding problem with the chickens ie not enough grit etc. The eggs are fresh.

If the egg has been laid on its side that could be the cause.  Storing pointy end down lets the yolk settle.  For hard boiled eggs you are better having an egg that is about 7 days old as they are easier to peel the shell off.   ;)
